At Alfonso, Cavite has converted a former event venue into a restaurant serving delicious vinalot meals. Casa Illustrisimo’s Marites Illustrisimo shared how she started and managed the booming Vinalot dining business.

Marites recalled that Casa Illustrisimo was a popular venue for weddings, birthdays and other events. After the epidemic-limited gathering, Marites was forced to cope with the changing times. She decided to turn the place into her restaurant.

“Namin, lagyan ng food ang place in Nai Sipan for the first time in 2 years” Marites shared with GMA’s Pera Paran.

They started out by serving goto, but soon they were able to make something like this due to their delicious binalot meal.

“Parang nagisip kami ng mga anak ko ng ano pa kaya ang pwede iserve na wala sa paligid. Why not try the Yung binalot?” said Marites.

Their business started with 5,000 pesos for a goto meal. When I added the vinallot to the menu, I only added about P3,000 to the capital.

With that determination, Marites’ Vinalot meal business currently earns between 80,000 and 120,000 pesos per week.

How to make a Pocheron Alfonso Vinalot Meal

Ingredients start with margarine, onion, garlic, pork, tomato sauce, liver spread, soy sauce, pineapple juice, salt and pepper, sugar and bell pepper.

Fry the onion and garlic in margarine in a hot pan. Add pork until golden brown. Pour in pineapple juice, soy sauce and liver spread. Add salt, pepper, sugar, and finally cheongyang red pepper.

Add half a cup of water. Boil for 30 minutes. After that, let it cool and prepare it for assembly into a vinalot.

You will need two square-shaped banana leaves. The salt comes out easily when you start eating the eggs by putting a little salt between the two banana leaves.

Place a cup of rice in the center of the banana leaf. We start to put Pocheron Alfonso on top of the rice. Many guests enjoy rice with plenty of sauce, so use the sauce sparingly. Add eggs. Fold the banana leaves and wrap them together. Tie the binalot using abaca rope.
